Blueberry Crumb Cake Recipe

  1. Preheat oven to 350 degrees.
  2. Coat a 9-inch round cake pan with cooking spray; line bottom with wax paper.
  3. Coat wax paper with cooking spray.
  4. Beat 2/3 c sugar and 1/4 c margarine at medium speed of a mixer till blended
  5. (about 5 min).
  6. Add in vanilla and egg; beat well.
  7. Lightly spoon 1 1/3 c. flour into dry measuring c.; level with knife.
  8. Combine 1 1/3 c. flour, baking pwdr, baking soda, and salt.
  9. Add in flour mix to creamed mix alternating with buttermilk, beginning and ending with flour mix.
  10. Stir in blueberries.
  11. Pour into prepared pan.
  12. Combine 3 Tablespoons sugar and remaining ingredients in a bowl; stir till mix resembles coarse meal.
  13. Sprinkle sugar mix over batter.
  14. Bake at 350 for 40 min or possibly till a wooden pick inserted in center comes out clean.
  15. Cold on a wire rack.
