Blueberry Crumb Cake Recipe
- Cooking Spray
- 2/3 c. Sugar
- 1/4 c. Stick Margarine Or possibly Butter, Softened
- 1 tsp Vanilla Extract
- 1 lrg Egg
- 1 1/3 c. All-Purpose Flour
- 1 tsp Baking Pwdr
- 1/4 tsp Baking Soda
- 1/8 tsp Salt
- 3/4 c. Low-Fat Buttermilk
- 1 c. Blueberries
- 3 Tbsp. Sugar
- 3 Tbsp. All-Purpose Flour
- 1 Tbsp. Stick Margarine Or possibly Butter, Melted
- 1 tsp Grnd Cinnamon
- Preheat oven to 350 degrees.
- Coat a 9-inch round cake pan with cooking spray; line bottom with wax paper.
- Coat wax paper with cooking spray.
- Beat 2/3 c sugar and 1/4 c margarine at medium speed of a mixer till blended
- (about 5 min).
- Add in vanilla and egg; beat well.
- Lightly spoon 1 1/3 c. flour into dry measuring c.; level with knife.
- Combine 1 1/3 c. flour, baking pwdr, baking soda, and salt.
- Add in flour mix to creamed mix alternating with buttermilk, beginning and ending with flour mix.
- Stir in blueberries.
- Pour into prepared pan.
- Combine 3 Tablespoons sugar and remaining ingredients in a bowl; stir till mix resembles coarse meal.
- Sprinkle sugar mix over batter.
- Bake at 350 for 40 min or possibly till a wooden pick inserted in center comes out clean.
- Cold on a wire rack.
