Saucy Paneer (Tofu) Crepes
- 1 cup flour
- 1 cup milk
- 1 egg
- 1 pinch salt
- 1 teaspoon butter
- 2 teaspoons oil
- 1 onion, chopped
- 12 cup cabbage, finely chopped
- 2 cups panir, grated
- salt
- fresh ground pepper
- 1 kg tomatoes, blanched and pureed
- 1 tablespoon oil
- 1 onion, chopped
- 1 teaspoon cornflour, dissolved in a little water
- 2 tablespoons cream
- 1 tablespoon sugar
- 12 teaspoon red chili powder
- salt
- 12 cup cheese, grated, for garnishing
- Blend all the ingredients, except the butter, for the crepes.
- Pour a little mixture into a buttered non-stick pan.
- Tilt the pan to coat it evenly.
- Cook the pancake on both sides.
- Make six more pancakes.
- To prepare filling: Heat oil.
- Saute the onion for a minute.
- Add cabbage and saute for another minute.
- Remove from heat.
- Add paneer, salt and pepper.
- Mix well.
- To prepare sauce: Heat oil.
- Fry the onion well.
- Add the remaining ingredients, except the cheese.
- Simmer for 2 minutes till the sauce thickens.
- To assemble: Spread a little sauce in a greased round baking dish, top with a crepe, spread a little sauce on it, followed by a little filling.
- Repeat the layers, finishing with some sauce and topped with the grated cheese.
- Bake, covered, on HIGH in a microwave for 5 minutes and uncovered for 2 minutes.
- Serve hot.
