Pork And Sausage Jambalaya Recipe
- 2 lbs. cubed pork
- 1 pound sliced smoked sausage
- 1/4 c. oil or possibly bacon drippings
- 2 c. onion
- 2 c. celery
- 1 c. bell pepper
- 1/4 c. garlic, diced
- 7 c. chicken stock
- 2 c. mushrooms (optional)
- 1 c. sliced green onion
- 1/2 c. parsley
- Salt and pepper to taste
- 2 tbsp. Kitchen Bouquet
- 4 c. uncooked rice
- Heat oil over medium high heat.
- Saute/fry pork till brown, about 20 min.
- Add in sausage, fry 10 more min.
- Take out all oil except 1 Tbsp.. Add in all vegetables till they are caramelized.
- Then add in stock, bring to rolling boil.
- Then reduce heat to simmer.
- Cook for 10 min.
- Season to taste using salt, cayenne pepper and black pepper.
- I suggest which you slightly over season since rice requires extra seasoning.
- Add in uncooked rice, reduce heat to very low and allow to cook for 1 1/2 hrs, stirring at 15 min intervals.
