Blueberry Applesauce Coffee Cake
- 1-1/4 qt. sugar
- 1-1/4 cups apple butter
- 1-1/4 cups butter, softened
- 1 qt. unsweetened applesauce
- 2-1/2 cups cholesterol-free egg product
- 1-1/4 qt. flour
- 5 tsp. baking soda
- 2 qt. POST BLUEBERRY MORNING Cereal, crushed
- Place sugar, apple butter and butter in 20-qt.
- bowl (or 2-qt.
- bowl for trial recipe) of electric mixer fitted with paddle attachment.
- Beat on medium speed 1 min.
- or until well blended.
- Add applesauce and egg product; mix well.
- Add flour, baking soda and cereal; beat on low speed just until blended.
- Spray 2 (4-inch deep) full hotel pans with cooking spray (or 4-inch deep half hotel pan for trial recipe).
- Spread batter evenly into pans.
- Bake in 350F-standard oven for 50 min.
- or until toothpick inserted in center comes out clean.
- Cool completely.
