Beans and Greens With Sherry-Shallot Vinaigrette

  1. Bring a pot of salted water to a boil.
  2. Add beans; return to a boil and cook 3-4 minutes, until crisp-tender.
  3. Drain beans and run under cold water until cool.
  4. Set aside.
  5. In a large bowl, whisk together oil, vinegar, mustard, salt, and pepper.
  6. Stir in shallots.
  7. Toss dressing with beans and lettuce.
