Tomato Zucchini Soup

  1. Mix all ingredients except lemon juice and salt in a large soup pot.
  2. Bring to a boil.
  3. Reduce heat.
  4. Cover and simmer 30 minutes.
  5. Stir in lemon juice.
  6. Puree half of the soup in a blender until smooth.
  7. Return puree to pot.
  8. Add salt to taste.
  9. Heat through.
