Blondie's Grandma's Sauerkraut Salad
- 2 tbsp vegetable oil
- 3/4 cup sugar
- 1/4 cup cider vinegar
- 1/2 cup chopped onion ( I use yellow)
- 1/4 cup celery, chopped
- 1/2 cup red bell pepper, chopped
- 1/2 to 1 teaspoon celery seeds
- 1 jar (1 pint 6 ounces) sauerkraut, rinsed and drained
- In a bowl, mix together sugar and oil.
- Add remaining ingredients, except sauerkraut, and mix well.
- Stir in sauerkraut.
- Cover and refrigerate for several hours or overnight.
- Serve with a slotted spoon.
