Creamy Pesto Chicken
- 2 boneless skinless chicken breasts
- 1 tbsp heaping of jarred pesto ( i use classico)
- 1/4 cup sour cream
- 1/4 cup mayonnaise (i use hellmans)
- 1 tsp squeeze garlic
- 2 Rings of onion, diced
- 1 dash onion powder
- 1 squeeze honey mustard
- 1/4 tsp ground black pepper
- 1/4 cup pecorino/asiago cheese
- 1 Few sprinkles of buttered italian breadcrumbs
- 2 dash salt
- 2 dash cayenne pepper
- Preheat oven to 350.
- Set chicken breasts aside.
- Mix all ingredients together except for salt ,cayenne pepper and breadcrumbs.
- Spread a tablespoon of the mixture in the bottom of a glass baking dish.
- Place chicken breasts on top of spread mixture in the dish.
- Season tops of chicken breast with salt and cayenne.
- Spread the remaining mixture evenly on top of the two chicken breasts.
- Sprinkle a layer of Italian breadcrumbs evenly on top of both chicken breasts.
- Place in oven at 350 F.
- Bake for 35 minutes.
- Broil for the last 5 minutes of cooking until golden brown.
- **** recipe may need to be doubled for larger chicken breasts****
