Family Breakfast Scramble
- 5 polish sausages or brats
- 2 cup orange juice
- 1/2 cup maple syrup
- 1 bay leaf
- 2 lb red potatoes; quartered
- 3/4 cup shredded cheddar
- 1/2 cup grated parmesan
- 1 green bell pepper; medium dice
- 1 red bell pepper; medium dice
- 1 yellow onion; medium dice
- 1 zucchini; medium dice
- 6 clove garlic; minced
- Place sausages in a medium sauce pot.
- Cover with orange juice and maple syrup.
- Add bay leaf.
- Poach at 170 until sausages reach 155.
- Pat sausages dry.
- Slice into bite size pieces.
- Set aside.
- While sausages are cooking, sweat veggies in a large saute pan.
- Add garlic a minute before veggies are tender.
- Add sausages to pan to reheat.
- Toss with cheeses.
- Serve.
