OREO* Ice-cream Puddings with Chocolate Sauce
- 1/4 cup craisins
- 1/2 cup pitted prunes
- 1/2 cup turkish dried apricots, sliced
- 2 tablespoons marsala or brandy
- 150g packet OREO* Original Cookies , roughly chopped
- 1 litre good quality vanilla ice-cream, softened slightly
- Chocolate Sauce
- 200g dark cooking chocolate, chopped
- 1/4 cup cream
- 1/4 cup marsala or brandy
- Combine craisons, prunes, apricots and marsala in a bowl, cover and leave overnight.
- Mix together the macerated fruit, OREO* cookies and ice-cream in a large bowl until combined.
- Spoon mixture into 10 base lined dariole moulds.
- Place in the freezer for 2 hours or until set.
- Combine chocolate, cream and marsala in a saucepan over a low heat until melted and smooth.
- Cool slightly before serving with OREO* ice-cream puddings.
