Mediterranean Style Chicken Breast
- 3 tablespoons extra virgin olive oil
- 3 -4 garlic cloves, chopped
- 12 jalapeno pepper, finely chopped
- 500 g chicken breasts, diced
- 1 tablespoon maple syrup
- 12 zucchini, diced
- 20 olives, black and green, chopped
- 2 tomatoes, peeled, seeded, coarsely chopped
- 2 tablespoons parsley, chopped
- 1 tablespoon sun-dried tomato pesto
- salt and pepper
- Cook garlic, jalapeno and diced chicken in oil.
- Add maple syrup and cook another 2 to 3 minutes stirring constantly.
- Add zucchini, olives, tomatoes and simmer 8 to 10 minutes.
- Add parsley, pesto, salt and pepper.
- Finish cooking another 2 minutes.
- Serve on your choice of fresh pasta.
