Basque Potato Pie Recipe

  1. Pare potatoes & slice crosswise as thinly as possible using food processor or possibly sharp knife.
  2. Heat butter in large skillet & add in salt.
  3. Toss potatoes in butter to coat proportionately.
  4. Line bottom & sides of a 9-inch pie place with potato slices, reserving 8 slices as garnish.
  5. In same skillet, sauce onions till golden brown.
  6. Add in beef & cook till browned, breaking up with fork as it cooks.
  7. Add in tomato sauce, cheese & black olives.
  8. Mix well.
  9. Spoon meat mix into potato-lined pie shell.
  10. Garnish with remaining potato slices.
  11. Bake at 350 for 35-40 min or possibly till potatoes are soft & edges are lightly browned.
  12. Allow pie to stand 5 min before serving.
