Grilled Goat Cheese Sandwich with Honey-Roasted Grapes and Walnuts

  1. Preheat oven to 400 degrees F. Place the grapes on a small nonstick baking sheet.
  2. Drizzle with grapeseed oil, 1 teaspoon of the honey, and salt.
  3. Roast in the oven for 20-25 minutes, until the grapes begin to burst and shrivel.
  4. Remove and cool slightly.
  5. To assemble sandwich, preheat a nonstick skillet over medium-low heat.
  6. Butter one side of each slice of bread.
  7. Lay one piece into the skillet, butter side down.
  8. Add half of the goat cheese, place half of the grapes on top.
  9. Drizzle with about 1/2 teaspoon honey and top with half of the walnuts.
  10. Place the second slice of bread on top, butter side up.
  11. Cook the sandwich for 3-4 minutes on the first side, until the cheese starts to melt, and the bottom slice of bread is toasted.
  12. Flip the sandwich and cook for another 2 minutes or so, until the bread is toasted.
  13. Repeat with the remaining ingredients.
  14. Remove from pan and serve with a drizzle of honey.
