Quick Chicken Parm with Creamy Tomato Sauce
- 6 RITZ Crackers, crushed (about 1/4 cup)
- 2 Tbsp. KRAFT Grated Parmesan Cheese
- 4 small boneless skinless chicken breasts (1 lb.)
- 2 tsp. oil
- 1/2 cup fat-free reduced-sodium chicken broth
- 1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Chive & Onion Cream Cheese Spread
- 1/4 tsp. dried basil leaves
- 1 small tomato, chopped Safeway 1 lb For $1.29 thru 02/09
- Mix cracker crumbs and Parmesan in shallow bowl.
- Rinse chicken with water; gently shake off excess.
- Dip chicken in crumb mixture, turning to evenly coat both sides of each breast.
- Discard any remaining crumb mixture.
- Heat oil in large skillet on medium heat.
- Add chicken; cook 6 min.
- on each side or until done (165 degrees F).
- Transfer to plate; cover to keep warm.
- Add broth, cream cheese spread and basil to skillet; bring just to boil, stirring constantly.
- Cook 2 to 3 min.
- or until slightly thickened, stirring frequently.
- Spoon over chicken; top with tomatoes.
