Quick Omega-3 Granola

  1. Preheat oven to 350F Brush heavy large rimmed baking sheet with 2 tablespoons oil.
  2. Whisk 2 tablespoons oil, sugar, egg whites, and salt in large bowl.
  3. Add oats, walnuts, and flaxseed; toss well.
  4. Spread mixture evenly on prepared sheet.
  5. Bake 15 minutes.
  6. Using metal spatula, stir granola.
  7. Bake 15 minutes longer.
  8. Stir again.
  9. Sprinkle dates over; drizzle with honey.
  10. Bake until golden brown, about 10 minutes longer.
  11. Stir to loosen.
  12. Transfer to clean baking sheet to cool completely.
  13. DO AHEAD: Can be made 1 week ahead.
  14. Keep chilled in airtight container.
  15. * Ground flaxseeds; available at natural foods stores.
