Tomato Pie Recipe

  1. Broil pie crust 1 minute (no longer).
  2. Remove and cold.
  3. Preheat oven to 375 degrees.
  4. Spread flour in bottom of shell.
  5. Saute/fry onion in extra virgin olive oil till limp.
  6. Arrange in bottom of shell.
  7. Combine baby Swiss with mayonnaise and mustard.
  8. Spread over onions.
  9. Follow with tomatoes and then Cheddar cheese.
  10. Combine salt, pepper, basil, Parmesan cheese and parsley.
  11. Sprinkle over all.
  12. Bake at 375 degrees for 25-30 min.
  13. If crust begins to get too dark, cover with foil.
  14. After baking, cold 10 min before cutting.
  15. Cut into 6 slices for main dish.
