Amaretto Peach Cheesecake

  1. BASE:
  2. Beat margarine and sugar until light and fluffy.
  3. Blend in egg.
  4. Add flour; mix well.
  5. Spread dough onto bottom of 9-inch springform pan.
  6. Bake at 450F (230C) for 10 minutes.
  7. BODY:
  8. Combine cream cheese, sugar and flour, mixing at medium speed on electric mixer until well blended.
  9. Add eggs, one at a time, mixing well after each addition.
  10. Add peaches and liqueur; mix well.
  11. Pour over crust.
  12. Bake at 450 degrees, 10 minutes.
  13. Reduce oven temperature to 250 degrees F; continue baking 1 hour and 5 minutes.
  14. Loosen cake from rim of pan; cool before removing rim of pan.
  15. Chill.
  16. Garnish with toasted almond slices and additional peach slices, if desired.
