Blackened Fish Sandwiches Recipe
- 1 lb Cod or possibly orange roughy filets
- 2 tsp Cajun seasoning
- 2 Tbsp. Vegetable oil
- 1/4 c. Soy sauce
- 1 x Lemon, juice of
- 4 x Sandwich buns
- 1/2 c. Thousand island dressing
- 1 head iceberg lettuce
- 1 x Sliced tomato
- Directions: Rinse the fish thoroughly and pat dry.
- Sprinkle the filets with the cajun seasoning and rub onto both sides of fish.
- In a large saute/fry pan, heat the vegetable oil till very warm.
- Saute/fry the fish filets till golden on both sides, flipping carefully.
- Add in the soy sauce and lemon juice and cook for 2 min more.
- To assemble the sandwich, spread each bun with thousand island dressing.
- Shred the lettuce and place on one side of the bun.
- Place a slice of tomato on top and finish with the blackened fish.
