Banana-Pecan Spice Cake

  1. Preheat oven to 350 degrees.
  2. Coat two 9-inch round cake pans with cooking spray.
  3. Spread pecans over ungreased baking sheet.
  4. Bake 3-4 minutes until lightly browned.
  5. Cool.
  6. At low speed beat cake mix, oil, water, eggs and banana 30 seconds.
  7. Increase speed to medium; beat 2 minutes.
  8. Stir in pecans and chocolate chips.
  9. Divide batter between pans.
  10. Bake 30-35 minutes or until toothpick inserted into centers comes out clean.
  11. Cool on racks 20 minutes.
  12. Remove from pans; cool completely on racks.
  13. Transfer 1 cup frosting to pastry bag fitted with star tip.
  14. Place 1 cake layer on serving plate; spread with 1 cup frosting.
  15. Top with remaining cake layer.
  16. Spread cake with remaining frosting.
  17. Pipe rosettes onto cake.
  18. Garnish with pecans, if desired.
