Paella Salad
- 1/3 cup KRAFT Real Mayo Mayonnaise
- 1 Tbsp. GREY POUPON Dijon Mustard
- 1/2 tsp. each ground cumin and hot pepper sauce
- 2 cups cooked yellow rice
- 1 cup chopped cooked chicken Whole Foods 1 lb For $3.99 thru 02/09
- 1/4 lb. cleaned shrimp, cooked, cut into 1/2-inch pieces
- 1/4 lb. smoked sausage, cut into 1/2-inch pieces
- 1/2 cup each chopped tomatoes and green onions King Sooper's 1 lb For $0.99 thru 02/09
- 3 cups baby spinach leaves
- Combine mayo, mustard, cumin and hot pepper sauce; set aside.
- Mix rice, chicken, shrimp, sausage, tomatoes and onions in large bowl.
- Add mayo mixture; mix lightly.
- Cover.
- Refrigerate at least 1 hour.
- Arrange spinach on serving platter just before serving; top with the rice mixture.
