Paella Salad

  1. Combine mayo, mustard, cumin and hot pepper sauce; set aside.
  2. Mix rice, chicken, shrimp, sausage, tomatoes and onions in large bowl.
  3. Add mayo mixture; mix lightly.
  4. Cover.
  5. Refrigerate at least 1 hour.
  6. Arrange spinach on serving platter just before serving; top with the rice mixture.
