Artichoke-Topped Potato Appetizers
- 16 red new potatoes (1 lb.) King Sooper's 5 lb For $1.88 thru 02/09
- 1 can (14 oz.) artichoke hearts, well drained, finely chopped
- 3/4 cup KRAFT Grated Parmesan Cheese
- 3/4 cup MIRACLE WHIP Dressing Family Dollar $3.50 thru 02/07
- 2 green onions, finely chopped
- Cook potatoes in boiling water in saucepan 15 min.
- or until tender; drain.
- Cool slightly.
- Meanwhile, combine remaining ingredients in medium bowl.
- Heat oven to 375F.
- Cut potatoes crosswise in half, then cut thin slice off rounded bottom of each.
- Place, bottom sides down, on parchment-covered baking sheet; top with artichoke mixture.
- Bake 20 min.
- or until heated through.
