Breakfast Burrito

  1. Preheat the oven to 425 degrees.
  2. Toss the diced potatoes and onions with the salt and olive oil until coated.
  3. Spread this mixture in an even layer on the baking sheet.
  4. Roast for 30 to 35 minutes, or until golden brown.
  5. Turn off the oven and use the oven mitts to remove the baking sheet.
  6. Heat the nonstick skillet over a medium burner.
  7. Crack the eggs into the skillet and add the hot sauce and ground pepper.
  8. Scramble the eggs with a rubber spatula while they cook, which should take about 4 minutes.
  9. Spread sour cream on each tortilla.
  10. Divide the filling ingredients among the tortillas, and roll them up.
  11. I like to add extra hot sauce to mine before I roll it up!
