Mini Key Lime Tarts for Easter

  1. In a medium bowl, whisk together pudding mix, milk, key lime juice and 1 drop of green food coloring.
  2. Divide pudding mixture between crusts.
  3. Chill for 1 hour.
  4. Stir together coconut and remaining 3 drops of green food coloring.
  5. Place a small amount of tinted coconut in the middle of each mini tart.
  6. Top with 4 jelly beans.
  7. Serve or refrigerate until ready to serve.
