Cranberry Kale Salad with Honey Lemon Vinaigrette
- 2 or 3 cups chopped kale
- 1/2 cup cranraisins
- 1/4 cup pine nuts
- 3 tbsp diced red onion
- 3 tbsp fresh cilantro leaves
- 2 green onions, chopped
- 1/2 tsp whole flax seed
- 3 tbsp crumbled goat cheese
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 1/2 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp honey or agave nectar
- 1/2 tsp black pepper
- 1 tsp fresh dill
- Mix all ingredients for vinagrette.
- Massage into the kale well for a minute or two.
- Let set for about 5 minutes while dicing other ingredients.
- Add remaining salad ingredients and toss well.
- Store whatever is not eaten in an airtight container in the refrigerator.
