Angel Scallops
- 1 lb Bay scallops
- 1 box angel hair pasta
- 1 stick butter
- 1/4 cup olive oil
- 1/4 cup grated Parmesan
- 1 tsp anchovy paste
- 2 tbsp fresh chopped parsley
- 1/4 tsp thyme
- 1/2 cup dry white wine
- 1 small onion chopped
- 4 clove chopped garlic
- Cook pasta as directed.
- Roll scallops in clean towel to remove moisture.
- Saute garlic, onion, anchovy paste and thyme in butter and oil.
- Add wine and reduce by half.
- Add parsley and scallops.
- Cook until scallops are done.
- Approximately 3 minutes.
- Add cheese.
- Toss pasta into sauce.
- Enjoy!
