Mixed Berry Parfaits with Horchata Pudding
- 1-1/2 qt. JELL-O Vanilla Instant Pudding
- 3/4 cup GENERAL FOODS INTERNATIONAL, Horchata, divided
- 1-1/2 gal. cold milk
- 1-1/2 qt. vanilla wafers, chopped
- 3 qt. mixed fresh berries (raspberries, blueberries and sliced strawberries) Safeway 1 lb For $3.99 thru 02/09
- 1-1/2 cups prepared whipped topping
- Place dry pudding mix and 3/4 cup of the drink mix (or 2 Tbsp.
- of the drink mix for trial recipe) in large bowl of mixer fitted with paddle attachment.
- Gradually add milk, beating 2 min.
- or until well blended, stopping occasionally to scrape side of bowl.
- Spoon 1/2 cup pudding mixture into each of 24 parfait glasses (or into each of 4 parfait glasses for trial recipe).
- Top each with layers of 2 Tbsp.
