Skillet Zucchini with Sour Cream & Parmesan

  1. Heat oil in large saucepan on medium-high heat.
  2. Add onions and garlic; cook and stir 3 to 4 min.
  3. or until crisp-tender.
  4. Add zucchini; cook and stir 5 min.
  5. Add water, pepper and bay leaf.
  6. Bring to boil.
  7. Stir in tomatoes; simmer on medium-low heat 5 min.
  8. Remove and discard bay leaf.
  9. Stir sour cream and cheese into vegetable mixture.
