Tart Dough

  1. Process the flour, salt, and herbs (if using) in a food processor until combined.
  2. Add the butter, and process just until the mixture resembles coarse meal.
  3. Whisk together the egg mixture and the water in a small bowl.
  4. With the processor running, pour in the egg mixture; process until the dough starts to come together.
  5. Shape the dough into a disk.
  6. Wrap in plastic wrap, and refrigerate at least 30 minutes.
