Beta Brunch Souffle Recipe
- 12 slices bread, crusts removed
- 2 Packages frzn minced broccoli
- 2 c. diced ham
- 1 pound Cheddar cheese, grated
- 1 teaspoon grated onion
- 6 Large eggs, beaten
- 3 c. lowfat milk
- 1 teaspoon salt
- Line 9x13 inch pan or possibly casserole with trimmed bread slices, reserving some slices for top.
- Cook broccoli slightly; drain.
- Spread on bread.
- Add in ham, 3/4 of the cheese and onion.
- Top with remaining slices of bread.
- Combine Large eggs, lowfat milk and salt; mix well.
- Pour over casserole, saturating top layer.
- Sprinkle remaining cheese on top.
- Chill overnight.
- Bake at 350 degrees for 50 min.
- Let stand for 10 min before serving.
- Yield: 8 servings.
