Salmon Sandwiches with Chimichurri Mayonnaise
- 1/4 cup KRAFT Zesty Italian Dressing, divided
- 6 salmon fillets (1-1/2 lb.), skin removed
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup cilantro, finely chopped
- 1/4 cup finely chopped onions
- 1/4 cup KRAFT Real Mayo Mayonnaise
- 1 tsp. crushed red pepper
- 1 tsp. lime juice
- 1 small French bread baguette, cut diagonally into 12 slices
- 1 cucumber, thinly sliced
- Heat 2 Tbsp.
- of the dressing in large skillet.
- Add fish; cook 4 min.
- on each side or until fish flakes easily with fork and golden brown on both sides.
- Meanwhile, mix remaining 2 Tbsp.
- dressing, the parsley, cilantro, onions, mayo, red pepper and lime juice.
- Spread mayo mixture onto bread slices.
- Fill evenly with fish and cucumbers.
