Profiteroles
- 250 ml water
- 80 grams butter
- 150 grams plain flour
- 3 eggs
- 435 ml milk
- 1 vanilla bean
- 3 egg yolks
- 70 grams granulated sugar
- 50 grams plain flour
- 250 grams dark chocolate
- 100 grams butter
- 100 ml sweet cream
- Bring the water to the boil.
- Add butter.
- Add flour.
- Stir it overt medium heat for 2min.
- Cool it down for 5min.
- Gradually add lightly whished egg.
- One at a time.
- Mix until dough is thick and glossy.
- Squeeze the dough in full circles.
- Bake them for 35min on 200C or until golden and puffed.
- For the filling, warm milk, add vanilla, egg yolks, sugar and flour.
- Mix for 5min or until mixture thickens.
- Cover the pan with plastic wrap and cool down the filling.
- Fill the profiteroles with filling from the bottom-up.
- Cover them with chocolate topping.
