Boiled Chestnut Cupcakes

  1. Slice the unpeeled boiled chestnuts in half.
  2. Scoop the insides into a bowl.
  3. Mash roughly.
  4. Sift flour into a bowl.
  5. Add baking powder and sugar, then mix.
  6. Add beaten eggs and vanilla extract.
  7. Mix until any flouriness is gone.
  8. Add melted margarine (or butter) in a few batches.
  9. Stir thoroughly.
  10. Add the chestnuts and mix fully.
  11. Cover with plastic wrap and chill in the fridge for 20 minutes.
  12. Preheat the oven to 200C/392F.
  13. Scoop the dough and fill to about 80% of the cupcake liners.
  14. Bake at 180C/356F for 20 minutes (or until the surface is golden brown).
