Minty Cucumber Dip
- 12 cup finely chopped cucumber
- 14 teaspoon salt
- 1 cup Greek yogurt
- 1 tablespoon lime juice
- 1 tablespoon chopped mint leaf
- In a fine mesh sieve, toss cucumber with salt.
- Place over a bowl and set aside to drain for 15 minutes.
- Squeeze excess moisture from cucumber and transfer to a small serving bowl.
- Add remaining ingredients and stir to blend.
