Southwest SIZZLING SALADS with Chorizo
- 3/4 lb. red potatoes (about 2), quartered King Sooper's 5 lb For $1.88 thru 02/09
- 1 cup water
- 1 pkg. (14 oz.) Mexican chorizo
- 1/2 KRAFT SIZZLING SALADS Southwest Chicken Dinner Kit
- 8 cups tightly packed torn romaine lettuce
- 1/2 cup each chopped red and green peppers
- 1 cup cherry tomatoes, halved
- 1 cup KRAFT 2% Milk Shredded Cheddar Cheese
- 1/2 cup pitted black olives, halved
- 1 cup tortilla chips (1 oz.), coarsely crushed
- Place potatoes in microwaveable bowl.
- Add water.
- Microwave on HIGH 3 to 5 min.
- or just until potatoes are tender; drain.
- Cook chorizo in large skillet on medium-high heat 6 min.
- or until done, stirring occasionally.
- Drain; return to skillet.
- Add potatoes and 1/3 cup Zesty Fajita Cooking Sauce; cook and stir 1 min.
- Cover plate with lettuce; top with peppers, tomatoes, chorizo, cheese, olives and chips.
- Drizzle with 1/3 cup Barbecue Ranch Dressing.
