Mandys Spanish Rice
- 2 tbsp olive oil
- 1 spainish chorizo chopped into chunks
- 1 onion, chopped
- 1 pepper diced
- 500 grams basmati rice
- 1 can sweetcorn 200g
- 500 grams passata
- 2 tbsp smoked paprika
- 1 tbsp ground cumin
- 1 smoked dried habenaro( optional)
- 250 grams water
- Heat oil in a pan ,add chorizo,onions and peppers saute for 2-3 minutes.
- Add rice and coat in oil ,finally add remaining ingredients mix well and allow to come to a boil.
- Reduce heat, cover and cook on low for 25-30 minutes until rice is fully cooked .
- Fluff up rice before serving and enjoy.
