Provencal Lentil & Vegetable Salad

  1. Bring water to a boil in saucepan on medium-high heat; add lentils.
  2. Simmer on medium-low heat 15 to 20 min.
  3. or just until lentils are tender; drain.
  4. Cool to room temperature.
  5. Combine lentils and remaining ingredients in large bowl; mix lightly.
