Provencal Lentil & Vegetable Salad
- 2 qt. water
- 1 qt. dry green lentils, rinsed
- 2 qt. baby spinach leaves, loosely packed
- 1 qt. grape tomatoes, chopped
- 2 cups red onions, chopped
- 2 cups yellow peppers, chopped
- 1-1/3 cups Kraft Sundried Tomato and Oregano Dressing
- 1-1/3 cups feta cheese, crumbled
- 1 cup fresh mint, finely chopped
- Bring water to a boil in saucepan on medium-high heat; add lentils.
- Simmer on medium-low heat 15 to 20 min.
- or just until lentils are tender; drain.
- Cool to room temperature.
- Combine lentils and remaining ingredients in large bowl; mix lightly.
