Chicken Strata
- 8 slices whole wheat bread
- 2 c. skinned, cooked and cubed chicken
- 1/2 c. onion, finely chopped
- 2/3 c. celery, finely chopped
- 4 oz. can diced green chilies (optional)
- 1/2 c. reduced fat mayonnaise
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 corn tortillas
- 3 eggs, slightly beaten
- 1 3/4 c. 2% low-fat milk
- 1 c. low-fat cottage cheese
- 10 3/4 oz. can condensed cream of mushroom soup
- Cut the bread into 1-inch cubes and place on the bottom of a 12 x 18-inch nonstick pan.
- Combine the chicken, onion, celery, chilies, mayonnaise, salt and pepper in a medium bowl; spoon over bread cubes.
- Tear the tortillas into bite size pieces and place on top of the chicken mixture.
- Combine the eggs, milk, cottage cheese and soup; pour over the top.
- Cover and refrigerate overnight to allow the flavors to blend.
