Easy Fajitas
- 1 green bell pepper
- 1 medium onion
- 12 cup sliced mushrooms (about half the package)
- 1 lb chicken strips (or real chicken, we dont eat meat. We used Morning Star Chicken Strips)
- 2 -3 garlic, pressed
- 12 teaspoon parsley
- 12 teaspoon cumin
- 12 teaspoon oregano
- 12 teaspoon paprika
- 18 teaspoon lemon juice (about 3 sprinkles)
- 18 teaspoon lime juice (about 3 sprinkles)
- 14 cup water (or less)
- tortilla
- Heat olive oil over medium heat.
- Saute the peppers, onions and mushrooms over medium heat for about 2 minutes.
- Add spices (parsley, oregano, paprika, and cumin) and sprinkle a little of lemon and lime juice.
- Press garlic and saute for 3-4 minutes Add cooked meat of your choice.
- Use the water to keep the veggies moist by adding a little water at a time.
- Cook until the meat is heated and the veggies are tender.
