stuffed peppers
- 2 each pointed red peppers
- 1 packages mascarpone
- 1 tsp chopped chilli
- 1 tsp garlic finely chopped
- 1 juice of one lime
- 2 tbsp grated parmesan
- 1 tbsp chopped fresh chives
- 1 dash lea and perrins
- preheat oven to gas 7
- cut peppers in half lengthwise and deseed
- mix all other ingredients except parmesan and season
- stuff peppers with mascarpone mix and top with grated parmesan
- bake in foil for 15 minutes and a further 15 with foil open
- serve as a starter with bread or light lunch with salad
