Pig Picken Cake
- 1 white cake mix with pudding in the mix
- 1/2 c. cooking oil
- 1 pkg. instant vanilla pudding mix
- 1 (20 oz.) can crushed pineapple
- 4 eggs
- 1 (11 oz.) can mandarin oranges with juice
- 1 1/2 c. milk
- 1 (9 oz.) carton whipped topping
- Combine cake mix, eggs, oil and oranges in a large bowl. Blend on low speed for 2 minutes.
- Grease and flour 2 layer cake pans.
- Bake at 350u0b0 for 33 to 38 minutes.
- Mix pudding mix with 1 1/2 cups milk until thick.
- Drain pineapple, reserving juice.
- Add pineapple and whipped topping to pudding; blend well.
- When cake has cooled, poke holes with a toothpick and pour reserved pineapple juice evenly over layers.
- Frost with the pudding mixture.
- Top cake with pecans, if desired.
