Quinoa Salad with Orange and Pistachio

  1. In a bowl, mix orange zest, juice, 2 tablespoons vegetable oil, vinegar, sesame oil, and 1/4 teaspoon each salt and pepper.
  2. In a large skillet, heat remaining 1 tablespoon vegetable oil over medium heat.
  3. Add broccoli, pepper, 1/4 teaspoon salt and 2 tablespoons water and cook, covered, stirring, until crisp-tender, 2 minutes.
  4. Drizzle with soy sauce.
  5. Transfer to a large bowl and toss with cooked quinoa, navel orange, pistachios, and dressing.
