Bread Stuffed Breast Of Veal Recipe
- 5 lb Breast of veal
- 2 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 tsp Paprika
- 1/2 tsp Garlic pwdr
- 3 Tbsp. Fat
- 1 x Onion chopped
- 1 x Green pepper diced
- 3 x Celery stalks sliced
- 3 Tbsp. Fat
- 6 slc Bread
- 1 tsp Salt
- 1/8 tsp Pepper
- 1/8 tsp Thyme
- 1 tsp Paprika
- 1 x Egg
- Have the butcher make a pocket in the veal.
- Sprinkle with the salt, pepper, paprika and garlic pwdr.
- For the stuffing; cook the onion, green pepper and celery in the fat for 10 min, stirring occasionally.
- Soak the bread in water; squeeze dry and pull into small pcs.
- Add in to vegetables with the salt, pepper, thyme, paprika and egg.
- Mix well.
- Stuff the pocket with the mix.
- Fasten the opening with skewers or possibly thread.
- Heat the fat in a roasting pan and place the veal in it.
- Roast in a 325 degree oven 3 hrs or possibly till meat is tender.
- Baste frequently and add in a little water if pan becomes dry.
- Serves 6 to 8.
