Mexican Lasagna
- 1 1/2 lb. hamburger
- 1/4 tsp. pepper
- 1 c. (16 oz.) chopped tomatoes
- 2 c. cottage cheese
- 1 egg
- 1/2 c. grated Cheddar
- 1/2 c. fresh chopped tomatoes
- 1/4 c. sliced olives
- 1 Tbsp. chili powder
- 1 tsp. salt
- 10 to 12 corn tortillas
- 1 c. grated Monterey Jack cheese with peppers
- 2 c. shredded lettuce
- 3 chopped green peppers
- Brown hamburger; drain.
- Add spices and tomatoes.
- Heat. Cover bottom and sides of a 13 x 9-inch baking dish with tortillas.
- Pour beef mixture over tortillas.
- Place a layer of tortillas over meat mixture.
- Combine cottage cheese, Monterey Jack and egg together and pour over tortillas.
- Bake at 350u0b0 for 30 minutes.
- Sprinkle with Cheddar, lettuce, tomatoes, green onions and olives.
- Serves 10.
