Beef Eggplant Skillet Meal Recipe

  1. Preheat electric skillet to about 375 degrees and brown beef and onion in small amount of fat.
  2. Spoon off excess fat.
  3. Sprinkle flour over the meat; stir well.
  4. Add in next six ingredients; mix well.
  5. Season eggplant with salt and pepper; arrange slices over the meat mix.
  6. Cover; simmer at 230 degrees till eggplant is tender, 10-15 min.
  7. Top with shredded cheese.
  8. Pass grated Parmesan with plates.
