Banana-Oat Muffins

  1. Preheat oven 350F.
  2. Grease muffin pan with light olive oil.
  3. Add the flour, salt, baking soda, cinnamon and oats to a large bowl.
  4. In a separate, smaller bowl, add the butter first and microwave until melted ( around 20-30 sec).
  5. In the same bowl, add the egg, sugar, and mashed banana.
  6. Blend mixture until smooth with the mixer on the lowest setting.
  7. Gradually add the wet mixture into the larger bowl, and stir until completely blended.
  8. Pour mix into the muffin pan and bake for 25 min.
