Artichoke Onion Frittata
- 3 tablespoons olive oil
- 1 large onion, chopped
- 1 (14 3/4 ounce) jar marinated artichoke hearts, drained and chopped
- 12 cup water
- 6 eggs
- 12 cup pancake mix
- 1 teaspoon salt
- 12 teaspoon pepper
- 34 cup grated colby-monterey jack cheese, divided
- Preheat oven to 325.
- Heat oil in large frying pan.
- Saute the onions for 2 minutes.
- Stir in artichokes and water.
- Saute for an additional 2 minutes.
- Remove from heat.
- In a bowl, beat eggs until smooth.
- Beat in pancake mix, salt and pepper.
- Stir in onion and 1/2 cup cheese.
- Pour into a 9 inch pie pan that has been sprayed with cooking spray.
- Bake for 25-30 minutes or until center is firm.
- Sprinkle with remaining cheese.
