Artichoke Onion Frittata

  1. Preheat oven to 325.
  2. Heat oil in large frying pan.
  3. Saute the onions for 2 minutes.
  4. Stir in artichokes and water.
  5. Saute for an additional 2 minutes.
  6. Remove from heat.
  7. In a bowl, beat eggs until smooth.
  8. Beat in pancake mix, salt and pepper.
  9. Stir in onion and 1/2 cup cheese.
  10. Pour into a 9 inch pie pan that has been sprayed with cooking spray.
  11. Bake for 25-30 minutes or until center is firm.
  12. Sprinkle with remaining cheese.
