Chocolate Brownie Sandwich Cookies with Peanut Butter Filling

• 2/3 cup peanut butter, smooth or chunky
• 1/4 cup confectioners' sugar
• 1 tablespoon unsalted butter, at room temperature
• 32 Big Chewy Brownie Cookies

1. Blend together the peanut butter, confectioners' sugar, and butter in a small bowl with an electric mixer until smooth and fluffy.
2. Carefully spread about 1 tablespoon filling on the flat side of one cookie, then press the flat side of a second cookie onto the filling to make a sandwich.
3. Repeat.
