Tapioca Cheese Waffles With Chimichurri Steak
- 1 egg
- 1/3 cup olive oil
- 2/3 cup milk
- 1 1/2 cups tapioca flour
- 3/4 cup queso fresco
- 1/4 cup pecorino
- 1 teaspoon salt (or more to taste)
- 1 bunch flat-leaf parsley, chopped with stems removed
- 1/4 cup fresh oregano, chopped
- 4-5 cloves garlic, chopped
- 2 tablespoons red onion, chopped
- 3/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons sweet hot mustard
- 1 teaspoon crushed red pepper flakes
- 2 tablespoons prepared horseradish (plain, not the creamed kind)
- 1 teaspoon salt (or more to taste)
- Mix all ingredients in a blender so that there are no chunks of cheese.
- Ladle batter into waffle maker per waffle maker's instructions and cook until golden-brown.
