Jan's Rocky Mountain Cheese Pear Pie

  1. Preheat oven to 375 degrees (200 C.).
  2. Line 10" pie plate with half of dough.
  3. Mix sugar, flour, nutmeg, salt, almonds and cheese together in large bowl.
  4. Mix water, lemon juice and almond extract in small bowl and pour over pears.
  5. Then toss pears in sugar and flour mixture above.
  6. Arrange in pie plate.
  7. Dot with butter.
  8. Top with crust rolled from reserved half of dough--make slits in top.
  9. Sprinkle top with granulated sugar.
  10. Bake at 375 degrees (200 C.) for 50-60 minutes or until pears are tender and crust is lightly browned.
