Cheesy Potato Casserole
- 2 lbs red potatoes
- 14 cup butter, melted
- 12 cup green onion, sliced thin
- 1 teaspoon salt
- 14 teaspoon pepper
- 8 ounces sour cream
- 2 -3 bacon, slices cooked crisp (optional)
- 1 (10 3/4 ounce) can cream of chicken soup, undiluted
- 2 cups shredded cheddar cheese
- buttered breadcrumbs, amount to taste
- Cook potatoes in boiling water until tender; drain and cool.
- Peel and cut into 1/4" slices; set aside.
- Combine 1/4 cup butter and next 6 ingredients in a large bowl.
- Gently stir in potatoes and cheese.
- Spoon into a lightly greased 13x9x2 inch baking dish.
- Sprinkle over potato mixture with buttered breadcrumbs.
- Bake, uncovered for 350 degrees for about 25 minutes.
